I've been having cravings for tomatoes the last few weeks.. And I'm starting to get somewhat tired of eating tomato sarnies, tomate soup and tomato salads..
Recipes that involves tomatoes would be very welcome (if it involves chili peppers I'd be a VERY happy boy).
So come on gals and guys, give me hot tips on food.

Don't know if these are available over there in Europe, but we get Tomato & Basil flavored Lay's here in the US. Not a recipe but it might help with your tomato cravings between meals.
If anything,I'm sure you could order them over the internet. I'll look up how to make your own and get back to you in a bit.

Basically a super tomato-ey, sort of herbal tasting pizza. I don't know if its ok to describe a pizza as "refreshing" but if it is, this is it.

Well, the problem isn't the lack of tomatoes, I grow my own :) It's just that I don't know what to do with them. I've got 15 kiloes here.

It's basically eggs poached in a spicy tomato sauce. It may look like a lot of work but it's really easy and very good.
If you are planning on having leftovers, I'd recommend making the sauce part then doing the egg poaching one serving at a time. Just reheat the sauce in a small dish and poach one or two eggs when you have it again.

I probably should not say this.. but.. My Uncle have a proper wood fire pizza/bread oven right in front of his house, and he lives like 10 minutes away from me. He hardly ever use it, but I'm up at his place at least twice every week to make bread and stuff.

Cool. I like cooking too, but I hardly find the time for it. I'm about to make chicken rollups which would be another good tomato related dish. It's super simple: take some chicken breast (a few pieces), pound them thin and stick them in a bag with some italian dressing to marinate for about an hour. Once done, , coat them in some italian seasoned bread crumbs mixed with some parmesean. Then place a piece of mozzerella on it and roll it up. Put the rollups in a caserole dish with tomato sauce, enough to coat the bottom of the dish and come up like a quarter of an inch on the chicken. Put some more cheese ontop of the chicken and bake it for 45 minutes to an hour at 350. It's amazingly good for being so simple.

I've been sick for the last two years, so I only work like 60% (24 hours each week), and that gives me SO MUCH time to cook. Those rollups sounds awesome as well. I've got lot's of new recipes now. I love oppo :)

Bake a simple corn bread with homemade salsa on top - you can put as much spice and tomatoes as your heart desires. Easy, too!
